My Vegetable BONANZA!
These salads happened when cycling through Newington Green, I spotted the veg shop. Today, I was NOT going to let it pass me by. Today, I was going to buy ALL the vegetables! Nom nom nom. Here is a link to the veg shop:
http://www.theothersidemag.co.uk/2012/02/newington-green-fruit-vegetables/It became a random splurge, me going around smelling all the fruits and vegetables (MasterChef) putting them together in my head, throwing them carelessly into my basket. Pomegranate, Cantaloupe, coriander, mint, radishes, red onion, fennel, rocket, tomatoes… i went mad! I had haloumi in my head (weirdly), and thought that a bit of feta would go well in there somewhere too.
I decided to go with a pistachio dukkah on the haloumi salad, which I had made before - that’s black onion seeds and pistachio nuts heated on a pan (to release aromas), then fired into a pestal and mortar with some zatar and pummelled together. The salad, I made with rocket, red onion, tomatoes, pomegranate and pine nuts. Dressing was my AMAZING pomegranate and orange oil dressing I brought back from South Africa, which is, I think, a mix of pomegranate molasses, orange and olive oil. So yummy.
The other salad was a load of chopped up melon, fennel, radish, feta, lots of mint and a few pomegranate seeds thrown in for good measure! The dressing was a simple lemon/oil/s&p dressing as the melon was so juicy and all the ingredients were full of flavour, I didn’t want to drown that out.
We had bits of cheese left in the fridge so I made a haphazard cheese board with this DELICIOUS apple and hazlenut relish Arlene had brought back from Scotland.
All in all, a tasty, (somewhat) healthy bonanza of raw veg*
Medb x*note: these salads were the night before the salmon recipe, which, as you can see, I thought was probably not the wisest thing to be eating at 4PM. I woke and felt like I’d swallowed a football!
